Walnut Brownies


  • 80g Plain Chocolate
  • 220g Butter
  • 1 teaspoon Almond Essence
  • 1 egg
  • 1/4 teaspoon Baking Power
  • 1/2 teaspoon Bicarbonate of Soda
  • 140g Demera Sugar
  • 130g Plain Flour
  • 70g Walnut pieces


  • Preparation Time: 10 minutes
  • Cooking Time: 25-30 minutes
  • Oven Temperature: 180 degrees
  • Uses greased 11x7 inch tin
  • Makes 16-20


Place the chocolate and butter in a saucepan. Heat on the hob until melted. Remove from hob and add the almond essence and the egg before stirring to combine. Measure out the remaining ingredients (except the nuts) into a mixing bowl and pour in the saucepan's contents. Stir until well mixed. Break the walnuts into small pieces, then add to mixture and stir. The mixture is now ready to go into the oven. Grease and line a 11x7 inch tin with baking paper. Then pour the mixture into the tin and sprinkle some extra demera sugar on top for crunch. Place into the oven for 25-30min at 180 degrees. To check its done, insert a fork. If done, it will come out clean.
